Description

A delightful banana upside-down cake featuring caramelized bananas and a moist, fluffy texture.


Ingredients

  • 3 ripe bananas
  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 175°C (350°F).
  2. Grease a 23 cm round cake pan generously with butter and sprinkle a layer of brown sugar on the bottom.
  3. Slice the ripe bananas into rounds and place them evenly over the brown sugar.
  4. Beat the soft unsalted butter with the granulated sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  6. Combine flour, baking powder, and a pinch of salt in a separate bowl and gradually fold into the wet ingredients.
  7. Pour the batter over the banana layer and spread evenly.
  8. Bake the cake for 40-45 minutes until golden brown and a toothpick comes out clean.
  9. Cool the cake in the pan for 10 minutes before inverting onto a serving plate.

Notes

For added flavor, replace one banana with mashed banana or add a sprinkle of cinnamon to the batter.
