- 3 ripe bananas
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 2 eggs
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 175°C (350°F).
- Grease a 23 cm round cake pan generously with butter and sprinkle a layer of brown sugar on the bottom.
- Slice the ripe bananas into rounds and place them evenly over the brown sugar.
- Beat the soft unsalted butter with the granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
- Combine flour, baking powder, and a pinch of salt in a separate bowl and gradually fold into the wet ingredients.
- Pour the batter over the banana layer and spread evenly.
- Bake the cake for 40-45 minutes until golden brown and a toothpick comes out clean.
- Cool the cake in the pan for 10 minutes before inverting onto a serving plate.
Notes
For added flavor, replace one banana with mashed banana or add a sprinkle of cinnamon to the batter.
