Description
A heavenly vegan dessert combining crispy Biscoff cookies with creamy vegan cream cheese and coconut milk, enriched with the rich flavors of freshly brewed coffee.
Ingredients
- Biscoff cookies
- Vegan cream cheese
- Coconut milk
- Icing sugar
- Strong brewed coffee
- Cocoa powder (for dusting)
Instructions
- Brew a cup of strong coffee and let it cool. Add a tablespoon of cocoa powder for a hint of chocolate.
- Mix in a large bowl the vegan cream cheese with the coconut milk and icing sugar. Beat the mixture with a hand mixer until fluffy and creamy.
- Dip the Biscoff cookies briefly in the cooled coffee and layer them in the baking dish.
- Add a layer of the prepared cream. Repeat until all ingredients are used, finishing with a generous layer of cream.
- Dust the top with cocoa powder or crushed Biscoff cookies, then refrigerate the tiramisu for about 4 hours, preferably overnight.
Notes
This dessert can be made ahead and will keep in the fridge for up to 3 days. It improves in flavor the longer it sits. For a frosty dessert, freeze portion sizes instead of refrigerating.
