Description

A comforting Cajun-Cream Cheese Chicken Pasta Bake, combining tender chicken, creamy cheese sauce, and vibrant vegetables.


Ingredients

  • 12 oz Penne or Rotini Pasta
  • 2 chicken breasts, diced
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente; drain and set aside.
  3. Heat the olive oil in a large skillet over medium heat. Add the diced chicken and Cajun seasoning, sautéing until golden brown (about 5–7 minutes).
  4. Remove the chicken from the skillet and sauté the diced onion, red bell pepper, and minced garlic in the same skillet for about 3–4 minutes.
  5. Add the cream cheese, stirring until melted. Then pour in the heavy cream and chicken broth to create a creamy sauce.
  6. Mix in the shredded cheddar and parmesan until melted and creamy.
  7. Combine the sautéed chicken, sauce, and drained pasta; toss well.
  8. Transfer the mixture to a greased baking dish and bake for 20–25 minutes or until bubbly and golden brown.
  9. Allow to cool slightly before serving.

Notes

You can add vegetables like spinach, zucchini, or broccoli for extra nutrition.
