- 12 oz Penne or Rotini Pasta
- 2 chicken breasts, diced
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 3 garlic cloves, minced
- 8 oz cream cheese, softened
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- ½ cup grated parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the pasta according to package instructions until al dente; drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the diced chicken and Cajun seasoning, sautéing until golden brown (about 5–7 minutes).
- Remove the chicken from the skillet and sauté the diced onion, red bell pepper, and minced garlic in the same skillet for about 3–4 minutes.
- Add the cream cheese, stirring until melted. Then pour in the heavy cream and chicken broth to create a creamy sauce.
- Mix in the shredded cheddar and parmesan until melted and creamy.
- Combine the sautéed chicken, sauce, and drained pasta; toss well.
- Transfer the mixture to a greased baking dish and bake for 20–25 minutes or until bubbly and golden brown.
- Allow to cool slightly before serving.
Notes
You can add vegetables like spinach, zucchini, or broccoli for extra nutrition.
