Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 avocado, sliced
- 1 carrot, grated
- 1/2 cucumber, sliced
- 4 nori sheets, cut into strips
- Fresh ginger, for serving
- Soy sauce, for serving
Instructions
- Rinse the sushi rice in a fine mesh sieve until the water runs clear.
- Cook the rinsed rice with water in a pot, bringing it to a boil and then simmering covered for 14-16 minutes.
- Season the rice with a mix of heated rice vinegar, sugar, and salt.
- Divide the seasoned rice among bowls and top with sliced avocado, grated carrot, cucumber strips, and nori.
- Serve with fresh ginger and soy sauce on the side.
Notes
You can prepare the rice a day in advance. These bowls are customizable with various vegetables and proteins.
