Description

Bright and fresh California Rolls Sushi Bowls capture the essence of sushi with creamy avocado, crunchy vegetables, and perfectly seasoned sushi rice.


Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 avocado, sliced
  • 1 carrot, grated
  • 1/2 cucumber, sliced
  • 4 nori sheets, cut into strips
  • Fresh ginger, for serving
  • Soy sauce, for serving

Instructions

  1. Rinse the sushi rice in a fine mesh sieve until the water runs clear.
  2. Cook the rinsed rice with water in a pot, bringing it to a boil and then simmering covered for 14-16 minutes.
  3. Season the rice with a mix of heated rice vinegar, sugar, and salt.
  4. Divide the seasoned rice among bowls and top with sliced avocado, grated carrot, cucumber strips, and nori.
  5. Serve with fresh ginger and soy sauce on the side.

Notes

You can prepare the rice a day in advance. These bowls are customizable with various vegetables and proteins.
