  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt (optional)
  • 1 cup dark chocolate chips (optional, including sugar-free variants)

Instructions

  1. Preheat the oven to 175 degrees Celsius.
  2. Mix the cottage cheese (or silken tofu), eggs, maple syrup, and vanilla extract in a large mixing bowl until smooth.
  3. Add the almond flour, unsweetened cocoa powder, baking powder, and salt, folding them gently into the wet ingredients.
  4. Incorporate the chocolate chips at the end.
  5. Pour the mixture into a lined baking dish and spread it evenly.
  6. Bake for 25-30 minutes until the edges are set but the center is still fudgy.

Notes
