Description
Delicious and nutritious protein brownies made with cottage cheese, offering a healthy alternative to traditional sweets.
Ingredients
Scale
- 1 cup cottage cheese (or 1 cup silken tofu for a dairy-free version)
- 1/2 cup unsweetened cocoa powder
- 1 cup almond flour (can be substituted with regular flour)
- 2 eggs (or 2 flaxseed eggs for a vegan option)
- 1/3 cup maple syrup (or sugar-free monk fruit syrup for a keto-friendly version)
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt (optional)
- 1 cup dark chocolate chips (optional, including sugar-free variants)
Instructions
- Preheat the oven to 175 degrees Celsius.
- Mix the cottage cheese (or silken tofu), eggs, maple syrup, and vanilla extract in a large mixing bowl until smooth.
- Add the almond flour, unsweetened cocoa powder, baking powder, and salt, folding them gently into the wet ingredients.
- Incorporate the chocolate chips at the end.
- Pour the mixture into a lined baking dish and spread it evenly.
- Bake for 25-30 minutes until the edges are set but the center is still fudgy.
- Let the brownies cool in the pan before cutting and serving.
Notes
For a perfect fudge effect, do not overbake the brownies. They should be firm at the edges and slightly moist in the center.
