Description

Delicious roasted cauliflower florets that are crispy on the outside and tender on the inside, seasoned to perfection.


Ingredients

  • 1 large cauliflower (approx. 1 kg), cut into florets
  • 4 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon turmeric
  • ½ teaspoon chili powder (optional, for extra kick)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons breadcrumbs (optional, for extra crunch)
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Prepare the cauliflower: Wash the cauliflower thoroughly and cut it into uniform florets (about 3-4 cm). Pat the florets dry with a kitchen towel to remove excess moisture.
  2. Mix the spice blend: In a large bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, turmeric, chili powder (if using), salt, and pepper. Add breadcrumbs if using for extra crunch.
  3. Toss the cauliflower: Add the prepared cauliflower florets to the bowl and mix thoroughly with the spice blend, ensuring each piece is well coated.
  4. Preheat the oven: Preheat your oven to 200°C (around 400°F) and line a baking sheet with parchment paper to prevent sticking and facilitate cleanup.
  5. Roast the cauliflower: Spread the cauliflower florets in a single layer on the baking sheet and bake for 20-25 minutes, until golden brown and crispy.
  6. Turn for even cooking: Flip the vegetables after about 15 minutes to ensure even cooking and crispiness.
  7. Check for doneness: After 20 minutes, check if the cauliflower is tender but still firm.
  8. Maximize crispiness: Turn on the broiler for the last 5 minutes to enhance the crispiness. Watch carefully to avoid burning!
  9. Serve: Remove the cauliflower from the oven, sprinkle with fresh parsley for a pop of color, and serve with lemon wedges for a zesty finish.

Notes

You can prepare the cauliflower ahead of time and store it in an airtight container in the fridge for quick snacks or dinners. For air fryer preparation, cook at 180°C (about 360°F) for approximately 15 minutes for the same crispiness with less oil.
