- 250 g Halloumi cheese (diced)
- 2 tbsp oil (vegetable oil or ghee)
- 1 large onion (finely chopped)
- 2–3 cloves garlic (finely chopped)
- 1 tsp fresh ginger (grated)
- 1 tsp cumin
- 1 tsp coriander powder
- 0.5 tsp garam masala
- 1 tsp paprika
- 400 g canned crushed tomatoes
- 200 ml cream
- 1 tsp sugar (optional)
- Salt and pepper (to taste)
- Fresh coriander (for garnish)
Instructions
- Prepare the Halloumi: Cut the Halloumi into 2 cm cubes. Heat oil in a pan and fry until golden brown. Set aside.
- Sauté the onion: Add the chopped onion to the same pan and sauté until soft and translucent (about 5 minutes).
- Add garlic and ginger: Stir in the garlic and ginger, cooking for about 1 minute until fragrant.
- Toast the spices: Add cumin, coriander powder, garam masala, and paprika, toasting briefly to enhance flavors.
- Incorporate tomatoes: Pour in crushed tomatoes and simmer for about 10 minutes until the sauce thickens.
- Stir in cream: Reduce heat and slowly mix in the cream, stirring constantly to prevent curdling.
- Add Halloumi: Gently fold in the fried Halloumi and simmer for another 5 minutes.
- Season: Adjust flavor with salt, pepper, and optional sugar.
- Garnish: Serve hot, sprinkled with fresh coriander.
Notes
Prepare onions and spices in advance for quicker cooking. Other vegetables like spinach or eggplant can be added for extra nutrition.
