Description

A delicious blend of crispy Halloumi and creamy, spiced tomato sauce that captivates the senses.


Ingredients

Scale
  • 250 g Halloumi cheese (diced)
  • 2 tbsp oil (vegetable oil or ghee)
  • 1 large onion (finely chopped)
  • 23 cloves garlic (finely chopped)
  • 1 tsp fresh ginger (grated)
  • 1 tsp cumin
  • 1 tsp coriander powder
  • 0.5 tsp garam masala
  • 1 tsp paprika
  • 400 g canned crushed tomatoes
  • 200 ml cream
  • 1 tsp sugar (optional)
  • Salt and pepper (to taste)
  • Fresh coriander (for garnish)

Instructions

  1. Prepare the Halloumi: Cut the Halloumi into 2 cm cubes. Heat oil in a pan and fry until golden brown. Set aside.
  2. Sauté the onion: Add the chopped onion to the same pan and sauté until soft and translucent (about 5 minutes).
  3. Add garlic and ginger: Stir in the garlic and ginger, cooking for about 1 minute until fragrant.
  4. Toast the spices: Add cumin, coriander powder, garam masala, and paprika, toasting briefly to enhance flavors.
  5. Incorporate tomatoes: Pour in crushed tomatoes and simmer for about 10 minutes until the sauce thickens.
  6. Stir in cream: Reduce heat and slowly mix in the cream, stirring constantly to prevent curdling.
  7. Add Halloumi: Gently fold in the fried Halloumi and simmer for another 5 minutes.
  8. Season: Adjust flavor with salt, pepper, and optional sugar.
  9. Garnish: Serve hot, sprinkled with fresh coriander.

Notes

Prepare onions and spices in advance for quicker cooking. Other vegetables like spinach or eggplant can be added for extra nutrition.
