Description
A fragrant and creamy Tikka Masala featuring grilled Halloumi cheese and colorful vegetables, perfect for any occasion.

- 400g Halloumi, cut into 2cm cubes
- 1 red bell pepper, cut into 2cm pieces
- 1 yellow bell pepper, cut into 2cm pieces
- 1 red onion, cut into 2cm pieces
- 2 tbsp olive oil
- 1 tsp Garam Masala
- 1/2 tsp turmeric
- 1/4 tsp chili powder (optional)
- Salt and pepper to taste
- 2 tbsp olive oil or ghee
- 1 large onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 piece of ginger (about 2cm), grated
- 1 red chili, finely chopped (optional)
- 1 can (400g) chopped tomatoes
- 2 tbsp tomato paste
- 1 tsp Garam Masala
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/4 tsp turmeric
- 1/4 tsp paprika (sweet)
- 1 pinch of sugar
- 200ml coconut milk (or cream)
- 100ml vegetable broth (or water)
- Juice of 1/2 lemon
- Fresh coriander, chopped, for garnish
- Salt and pepper to taste
- Basmati rice or naan bread, for serving
Instructions
- Prepare Halloumi and vegetables: Cut Halloumi, bell peppers, and onion into even-sized pieces.
- Make the marinade: In a bowl, mix olive oil, Garam Masala, turmeric, chili powder, salt, and pepper.
- Marinate Halloumi and vegetables: Toss the cubes in the marinade and let them sit for at least 15 minutes.
- Assemble the skewers: Thread Halloumi and vegetables alternately onto skewers.
- Heat oil or ghee in a pot and sauté the chopped onion until golden brown.
- Add garlic, ginger, and optional chili; sauté until fragrant.
- Incorporate the chopped tomatoes and tomato paste; bring to a boil.
- Add spices: Stir in Garam Masala, coriander powder, cumin, turmeric, paprika, and a pinch of sugar. Simmer for 10 minutes.
- Stir in coconut milk and broth; simmer for 5-10 minutes until thickened.
- Finish with lemon juice and adjust seasoning.
- Grill the skewers for 2-3 minutes per side until golden brown.
- Transfer skewers into the sauce gently.
- Serve with basmati rice or naan topped with fresh coriander.
Notes
Ensure to cut Halloumi into even pieces for uniform grilling. You can also add zucchini or eggplant for variety.
