Description

A vibrant combination of juicy shrimp, creamy avocado, and refreshing mango salsa, perfect for warm days or quick weeknight dinners.


Ingredients

  • 500 g fresh or frozen shrimp, peeled and deveined
  • 2 ripe avocados, halved and pitted
  • 1 ripe mango, diced
  • 2 limes, juiced
  • 1 fresh red chili, finely chopped
  • A handful of fresh cilantro, roughly chopped
  • 2 tbsp olive oil for shrimp
  • Salt and pepper to taste

Instructions

  1. Rinse the shrimp under cold water and pat dry with a kitchen towel. In a bowl, combine the shrimp with olive oil, lime juice, salt, and pepper. Allow to marinate for at least 15 minutes.
  2. Mix the diced mango, chopped chili, and cilantro in a separate bowl. Season with lime juice, salt, and pepper and let it sit for a few minutes.
  3. Heat a pan over medium heat and sauté the marinated shrimp for about 2-3 minutes on each side, until pink and cooked through.
  4. Slice the avocados while the shrimp cook, removing the pits and cutting the flesh into thin slices.
  5. Assemble the bowls by layering avocado slices, cooked shrimp, and topping with mango salsa. Garnish with additional cilantro if desired.
  6. Prepare the lime chili sauce by mixing lime juice, chopped chili, and a drizzle of olive oil in a small bowl.

Notes

Make sure to use ripe avocados for the best texture. Feel free to adjust the spice level by altering the amount of chili used.
